I am a hard core South Indian when it comes to Idli and Dosa (Dose as we call it in Kannada), but a lil fusion doesn’t hurt you see. So when I was super hungry on a chill, wintry evening and didn’t want to indulge in anything deep fried or even shallow fried (the dead-against-deep-fried-stuff that I’m) and wanted something simple, I realised that had ID Ragi dosa batter at home. Why make something ordinary when you can create something offbeat?

I had some leftover rajma beans from the afternoon lunch and made some optimal use of it. I gave this dosa a Mexican twist and Lo! It was just right for the evening and the husband couldn’t stop digging into it.

We paired it with tabasco sauce but you could also pair it with spicy mayo as well for a creamy kick.

The filling would take just 15 minute of your time and you could use it later (if you have left over) to make quesadillas as well. Oh! By the way, when I was thinking what to term this dish since it is a fusion, a lot of suggestions poured in from my family – funny ones 😀

One said Dosadilla, yet another said Mini Mexican Dosa Bites, one more was Dosita (Like Fajita), and many other funny names, I thought I must stick to something simple since the dish is also simple.

I have added pickled Jalepenos to keep it more spicy, but, since Jalepenos can be a little tough on the intestine’s lining you could do away with it or add two green chillis instead. But if you can take the spice and enjoy it thoroughly, you would definitely not want to skip Jalepenos! I for one love it.

Or the best thing would be to add a bit of mozzarella cheese to even out the heat. I prefer it without the cheese for those authentic flavours. Isn’t it so simple? I mean look at it this way, you get proteins from the beans, calcium from the ragi dosa, the herbs are so good for the gut and digestion, and you have the corn for a bit of starch. Wholesome snack this is!

For the Filling
Instructions
  1. To begin making the mini ragi dosa with corn and bean filling first heat oil in a wide bottomed pan and add the garlic and onions, once they turn translucent add the corn, jalapenos and herbs and give it a quick stir. Now add the beans, salt and mix everything together. Keep it aside to cool.
  2. Heat a pan on high heat and bring it down to medium low. Now drizzle some oil and rub the pan with a paper towel. Take a small amount of the IDFresh ragi dosa batter and spread it on the pan. Add some oil and once it half cooked, add the filling.
  3. Neatly lift the dosa from the pan and transfer it to a serving platter. Garnish with coriander if you like it. Serve hot with Tabasco sauce or a creamy mayo of your choice.
Recipe Notes
  • You could use the normal dosa batter also if you wish to instead of ragi dosa batterr.
  • If you want to skip the beans you could use potatoes as a filling.
