There’s nothing quite like a tea cake that can make your evenings fulfilling. When I made this ooey gooey Caramel sauce I wasn’t sure what I’d make out of it with a long recipe list on hand. I decided to get coffee and caramel to go on a date and get them married to see how they’ll make up for each other.. VOILA! I was pleasantly surprised with the outcome! I mean, I know coffee and caramel do get along well, but in a cake with walnuts? I had my apprehensions, but this one is a keeper for sure!

Also, because Christmas is just around the corner and if you want to bake something offbeat this time aside of the traditional plum cake and other baked goodies, this cake is for you! There’s a whole new flavour burst you’ll experience with this cake because of the buttery caramel sauce. Yasss.. You’ve got to try it to believe it! Every bite is so soft, melt-in-the-mouth and addictive. Plus, if you plan to bake it and share it with your folks at office or home, be warned that you will not have a bite to spare, ensure you make an extra loaf for yourself 😉 Alright then, lets get our hands dirty and bake this cake shall we?

What’s not to love about this cake? There’s coffee, there’s caramel, walnuts and it melts in the mouth with every bite.

Ingredients
Instructions
  1. Pre-heat oven to 180 degree Celsius. In a large bowl, take yogurt/curd and add sugar. Whisk well until it dissolves. Now add the baking soda, baking powder and whisk again until it starts foaming up a bit.
  2. Add oil, and then add the espresso mixture and mix well. To this mixture add the flour and fold it in carefully.
  3. Once the mixture is well incorporated (should resemble dosa/pancake batter) add a bit of the walnuts. Pour the batter into a greased baking tin lined with parchment paper and tap until the air bubbles are gone. Sprinkle walnuts on it and bake for 30 minutes or until a toothpick inserted comes out clean.
  4. Cool the cake completely and then drizzle it with caramel sauce over it. Cut them into slices and enjoy it with a cuppa or tea.
Recipe Notes
  1. You can pour half the batter into the pan, add a bit of caramel sauce and again top it with the rest of the batter, make swirls in between. But ensure you bake this carefully as it tends to get dense and soggy.
  2. Store it in an airtight container and refrigerate it. Will last a week.
