The normal veggie fried rice fare is pretty common.. but this was something that I hadn’t tasted until I visited a restaurant called ‘Mandi’ in Bangalore. We found this item really interesting on the menu and ordered it! It was a gastronomical delight! the taste still lingers on my taste buds! 🙂 I desperately wanted to try this and had experimented a couple of times when I was in Bangalore. I made this for a special Christmas lunch a few days ago.

- You could use red, yellow and green pepper for this recipe, since the red and yellow pepper is a little sweet I avoided adding it.
- You could also use olives to make it a little more colourful.
