Corn Capsicum Fried Rice


The normal veggie fried rice fare is pretty common.. but this was something that I hadn’t tasted until I visited a restaurant called ‘Mandi’ in Bangalore. We found this item really interesting on the menu and ordered it! It was a gastronomical delight! the taste still lingers on my taste buds! 🙂 I desperately wanted to try this and had experimented a couple of times when I was in Bangalore. I made this for a special Christmas lunch a few days ago.


Ingredients

Sweet Corn (frozen) 1 cup
Capsicum/ green bell pepper 1 cup
Soy Sauce ¼ tsp
Red Chilli Sauce 1-2 tbsp
Green Chilli Sauce 1-2 tbsp
Ginger -Garlic paste 2 tbsp
Cooked basmati rice 2 cups
Pepper powder 1 tsp
Salt As needed
Oil 3-5 tbsp
Spring onions/ scallions 1 bunch

Directions

  1. Cook 2 cups of basmati rice and keep aside. In a wok pan, heat oil on medium flame and add onions. Saute them lightly and add ginger-garlic paste, then saute them until they’re transparent.
  2. Now add Capsicum/ bell pepper, and the white the white part of the spring onions and mix well till they become slightly soft ( make sure it is lightly crunchy)Add soy sauce, red and green chilli sauce, pepper and mix well.
  3. Mix in Corn and give it a stir
    4.Then add the cooked rice and add the green part of the spring onions and incorporate them well.

5. Serve hot with tomato sauce.
 Note
  • You could use red, yellow and green pepper for this recipe, since the red and yellow pepper is a little sweet I avoided adding it. 
  • You could also use olives to make it a little more colourful.
